Hyderabad in India is famous for Biriyani and Kebabs – the great cuisine from the Nizams ‘  gastronomic legacy . But recently I found bill boards  for Chinese kebab  and  Vaishnavi Chinese fast food  , both in Hyderabad itself .  While Chinese Kebab could be an attempt to try fusion of dakhni [the deccan cuisine ] and Chinese style menu ,vaishnavi Chinese food floored me  as I could not establish any connection between the pure Hindu vaishnavi  kitchen with the  global Chinese fast food . Another interesting finding from my direct experience with chinese food  in China is that the chinese cuisine you get in India is not available anywhere in China . It is quite possible that the corruption in recipe over a period of time occured through ” China towns ” in Calcutta , Madras and  Rangoon during the second world war days. The original bland variety of noodles got more spicy to suit the Indian palate and today we have  “Chilly Chicken ” and the like offered as chinese food in restaurants across India . Another Indian innovation in North India is the ” Chinese Dhaba ” , a way side shack offering a mix of Punjabi and Chinese menu .  Very soon , you could hope to get South Indian Chinese food  and may be a Kashmiri noodles  also .  After all , India is known for ”  unity in diversity ”  and therefore why not a fusion food culture for the Chinese Cuisine?
